Fettuccine Alfredo has been one of my favorite dishes for as long as I can remember. When I like a dish, I make it again and again. When I was a teenager, I started making Alfredo sauce from scratch the traditional way, using butter, parmesan cheese, and pasta water or cream. I’ve made it many times, but it’s not very quick and requires vigilance and a little cooking skill and learning as a teenager. Sometimes I get delicious homemade Alfredo sauce, and sometimes I get less than ideal results.

As a college student, I went to visit some friends and he showed me how he used a recipe trick of adding cream cheese to Alfredo sauce to help it thicken and emulsify (i.e. combine and become a very thick form.) This tip may not work for most traditional, but a super quick, easy, and almost fail-proof way to make delicious Alfredo sauce. I’ve been making alfredo sauce at home ever since and never miss the classic style!

This recipe makes about 3 cups of sauce. Mixing with 1 pound of cooked pasta is sufficient.
This recipe can be cut in half to use less sauce, or you can double the ingredients to make twice as much sauce. Make sure you have a large enough frying pan!
Just follow the recipe while cooking the lasagna (or pasta of your choice) until al dente according to the package instructions. Drain the pasta and add to the pan of alfredo sauce and toss with the sauce until evenly coated.

Depending on your salt intake and tolerance, you may not need to add more salt to your alfredo sauce. You can borrow most of its saltiness and flavor from Parmesan cheese.
