I love an easy dinner idea, and this fried rice recipe fits the bill. Fried Rice is a big favorite with my kids, and it gives me a chance to throw in veggies and protein to make sure they get a well-rounded meal. This recipe is really about making it your own, which I love, and I’m a great way to use up leftovers! Honestly, you can throw in almost any type of protein and vegetable to make it perfect for picky eaters. Or make this as a side dish with your favorite chicken recipe! Either way, it’s a great skillet recipe to make on busy nights.

Great question!! I always use Jasmin rice, because it’s a longer and stronger rice that doesn’t spread out, or clump up when making fried rice! Short grain rice tends to be softer and stickier.
Basmati rice is also a good choice. And of course you can use either white or brown rice too, it’s totally up to you!

You can use freshly cooked rice, but the end product may be softer than the fried rice you get from a restaurant.
I used a basic combination of vegetables here – onions, carrots and peas. You can substitute a bag of frozen mixed vegetables if you want to save some time and skip the chopping, or add more finely chopped vegetables like peppers or broccoli. The vegetables are cooked in the pan first, then the eggs are cooked and stirred. Next comes the rice seasoned with soy sauce and roasted sesame oil. Add a sprinkling of scallions and enjoy! My whole family loves this easy fried rice, it’s a staple on our dinner menu and it’s sure to become a regular on yours too.
